2 1/2 cups flour
1/2 cup cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 cup butter, softened
2 cups sugar
4 eggs
1 cup sour cream
1/2 cup milk
1 bottle (1 oz) red food color
2 tsp. pure vanilla extract
MIX flour, cocoa, baking soda, and salt. BEAT butter and sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy. Beat in eggs, 1 at a time. Mix sour cream, milk, food color, and vanilla. Gradually beat in flour mixture on low speed just until blended. Spoon batter into paper-lined muffin cups, filling each cup 2/3 full. BAKE in preheated 350 F oven 20 to 25 minutes. Cool in pans 5 minutes. Remove from pans; cool completely. Spread with frosting. Makes 30 cupcakes.
Recipe for Cream Cheese Frosting
1 package (8 oz) softened cream cheese
4 tbsp. softened butter
2 tbsp. sour cream
2 tsp. pure vanilla extract
1 box (16oz) confectioner's sugar
Beat the top 4 ingredients in large bowl until light and fluffy. Gradually beat in confectioner's sugar on medium speed until smooth.
Fudge Pie!
1 cup sugar
1/4 cup cocoa
1 stick of butter
2 eggs
1 tsp. vanilla
1/4 cup flour
1 unbaked pie shell
Mix all dry ingredients together. Beat eggs by hand, melt butter in microwave, and add to dry ingredients. Add vanilla last, stir, and pour into pie shell. Bake in preheated 350 F oven for 25 minutes. Best served warm with ice cream.
My little helpers! They enjoyed their day of baking...started their own pretend company and was cooking away with their tool workshop turned into kitchen stove...ha! They took their cakes to competitions and won 1st and 2nd place! Don't you just love the imagination of children! Love my little boys!
